This easy low-carb skinny pizza recipe makes four pizzas. A whole pizza for less than 380 calories? Yes – you heard correctly!

Pizza was probably my biggest craving during my low-calorie diet days. I scoured far and wide online and sat through countless obnoxious YouTubers’ ‘performances’ to pull this together so you don’t have to tourture yourself like I did! Several low-carb recipes were found, but they were not necessarily low-calorie. I settled on two pizza base options to try: cauliflower and egg-based.

I tried the cauliflower one first. The original recipe (I told you these videos were obnoxious) called for obscene amounts of parmeasan to act as a bonding agent which was definitely not low-calorie, so that was out of the question. I did find a way around it using some light cheese and phsyllium husks as bonding agents and it was definitely nice. It was a bit more filling than this one, but it was a SUCH faff to make! If you’re like me, you’ll like recipes which are as easy as possible. Comment below if you’d like me to post my cauliflower version too.

I know – when you hear ‘egg-base pizza’ you don’t exactly jump for joy, but it’s really not bad at all! I tweaked the quantities of the ingredients to work with my diet and keep it as low-cal as possible. It doesn’t taste eggy, thanks to the garlic powder, sauce and toppings and it has a good texture which holds together really well.

You can easily make this recipe keto-friendly with a flour alternative and if you’re not counting calories, load up with more toppings to make it more filling!

Skinny Pizza Recipe

Indulge with a whole pizza to yourself without feeling guilty or bloated the next day. This easy, low-carb recipe makes four skinny pizzas.

Equipment

  • Mixing bowl
  • Blender
  • Non-stick frying pan with a lid
  • Pizza pan

Ingredients
  

For the base:

  • 4 Eggs
  • 520 g Egg whites
  • 8 g Garlic powder
  • 36 g All-purpose flour

For the sauce:

  • 400 g Tinned plum tomatoes
  • 5 cloves Garlic
  • 10 Fresh basil leaves
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 tsp Chilli flakes
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Sweetener
  • 1 tsp Olive oil

For the toppings:

  • 80 g Baby spinach
  • 12 Cherry tomatoes Halved
  • 160 g Grated light mozzarella cheese

Instructions
 

  • Preheat the oven to 200°C
  • Blitz all of the pizza sauce ingredients in a blender until smooth and put to one side
  • Add all of the pizza base ingredients together and whisk/blend
  • Preheat the pan on the stove at a medium heat
  • Spray with some olive oil spray and add a quarter of the pizza base mixture to the pan. Cook for 3 minutes with the lid on. The goal is to slightly burn it to give it more of a familiar pizza texture
  • Flip the pizza, replace the lid and cook for another 3 minutes
  • Remove the lid and flip again. Cook a bit more until it’s a bit crispy then move it from the frying pan to a pizza pan
  • Repeat steps 5-7 to make the other 3 pizza bases
  • Add the sauce and toppings (cheese last) and bake in the oven for 5-10 minutes / until the toppings are cooked to your desire
